Are you missing our Goody Two’s fried chicken? We thought so. 

Now, you can recreate it at home (until we reopen) with this home recipe by Scott Bridger.

MARINADE

500gm chicken thigh cut into chunks

100ml shaoxing cooking wine

2 cloves garlic, crushed

1 small peice of ginger, crushed or finely chopped

1 tsp salt

1 tsp sugar

FLOUR

100gm plain flour

100gm corn flour

100 gm rice flour

2 tblsp onion powder

2 tbsp garlic powder

4 lt vegetable oil

METHOD

1.Mix all the marinade ingredients and leave to sit for 3 hours or over night

2.Whisk all the flour ingredients together.

3.Heat a large pot with the oil to a medium heat or 180c if you have a thermometer

4.Toss the chicken in the flour to coat and shake excess flour off.

5.Place in the hot oil carefully and let it cook for 3 minutes then remove and place on tray to rest for a further 3 minutes

6.When ready to serve place chicken back in the oil for a further 2 minutes then remove and place on absorbent paper.

SAUCE

For a quick sauce, place 1/4 cup kewpie mayonnaise and 2 tablespoon of siracha  sauce into a bowl and whisk to combine.

SCOTT’S TIP: Serve hot with a cold beer & make sure you are safe around hot oil.
